iRACE Lab is excited to welcome Abbey Folsom to the team
Until I met Dr. Ennis, it was hard to imagine an opportunity to combine my unique life experiences and academia into one job. First and foremost, I’m a professional with disabilities. My goal is to narrow the gap between perceptions about disabled people and quality work. Academia was not a straightforward path navigating a university setting as a Little Person with chronic pain. I’m grateful that I’ve followed my interests and get to enjoy what I do.
I graduated from FSU College of Human Sciences, Department of Nutrition, Food and Exercise Science. Both my BS and MS are in Nutrition and Food Science, majored in Nutrition Science. During that time, I had the opportunity to study neuroscience, and the effects of polyphenols on osteoarthritis and osteoporosis. Secretly hoping I would one day have the researching opportunity to apply what I’ve learned about flavonoid biochemistry to cannabis and pain.
I am a Certified Nutrition Specialist (CNS) and a Florida Licensed Dietitian/Nutritionist. In addition to clinical practice, I'm a Research Assistant within the Center for Translational Behavioral Science. I work in primary care for Dr. John Ness. I am part of his interdisciplinary team of providers that serves patients from all surrounding counties. I’m also a member of the Exam Development Council for the Board for Certification of Nutrition Specialists - my national credentialing agency.
I grew up in Tallahassee and I’m 7th generation Floridian on both sides of my family. My joyful interest is my dog, Jacques Cousteau. He is the second Coton de Tuléar I’ve had. Ask me lots of questions about the breed. My family would say I’m obsessed - it’s what’s wrong with me. Having a dog is a definitive philosophy of my life and quality assurance! Even with chronic pain, Cousteau is the best excuse to get out of bed. Caffeine is my favorite drug and socially accepted flavonoid; there is never too much coffee or tea.
